3 1/2 pounds of mashed potatoes
2 pounds ground lamb
2 large onions
3 carrots, sliced
1 tablespoon Worcestershire sauce
1 tablespoon tomato paste
2 cups low fat/low salt stock
Tobasco sauce, salt & pepper to taste
1 square package of frozen peas (not part of original shepherds pie)
In a large fry pan, sauté onions and carrot slices until onions are translucent. Add ground lamb and brown until fully cooked. Turn down heat and add stock, tomato paste, Worcestershire sauce & seasonings. Add peas & remove from heat.
Pour meat mixture in bottom of a 3 quart baking dish. Top with mashed potatoes. [to make it fancier, top meat mixture using a pastry bag with a large star tip].
Brush top of potatoes with melted butter. Center baking dish on parchment lined cookie sheet. Bake at 450 degrees for 1/2 hour.
