1 package Bacon, 8-0unce, sliced

3 1/2 cups Italian or White Bread, cubed

2 1/2 cups milk

3/4 teaspoon salt

1/2 teaspoon hot pepper sauce

1/4 teaspoon oregano

4 eggs

boiling water

 

ABOUT 1 1/2 HOURS BEFORE SERVING:

Dice bacon. In 2-quart saucepan over medium heat, cook bacon until browned. With slotted spoon, removebacon to paper towels to drain.

In shallow 1 1/2 quart casserole, arrange bread cubes. In medium bowl with fork, beat milk, salt, hot peppersauce, oregano, and eggs until well mixed; stir in all but 2 tablespoons bacon. Pour egg mixture over bread incasserole.

Set casserole in roasting pan large enough to hold casserole easily; place on oven rack. Fill roasting pan withboiling water to come halfway up side of casserole. In 325 degree oven, bake casserole 50 to 60 minutes or untilknife inserted in center comes out clean. Sprinkle remaining bacon over bread-and-egg mixture in casserole.
