2 tablespoons olive oil or salad oil
1 small onion, chopped
1 large garlic clove, minced
1 tablespoon sugar
2 tablespoons chopped fresh basil leaves or 2 teaspoons dried basil
1 1/2 teaspoons salt
1 16-ounce can tomatoes
1 6-ounce can tomato paste
About 30 minutes before serving
In 2-quart saucepan over medium-low heat, in hot olive oil, cook onion and garlic until tender, stirring occasionally.
Stir in sugar, basil, salt, tomatoes with their liquid, and tomato paste; heat mixture to boiling, stirring to break up tomatoes. Reduce heat to low; cover saucepan and simmer 20 minutes to blend flavors, stirring occasionally. Makes about 2 1/2 cups sauce or enough to serve over one 8-ounce package spaghetti as 6 accompaniment servings.
